HERE’S WHAT YOU’LL NEED

Ingredients

Yield: 4 servings

ONE STEP AT A TIME

Let’s make it

  1. Mix the mayonnaise, ketchup, and mustard in a small bowl and refrigerate while preparing the burgers.
  2. Divide the beef into four equal portions. Shape gently into patties about ¾ inch thick, making a shallow indentation in the center. Season both sides with salt and pepper.
  3. Heat a large cast-iron skillet over medium-high heat. Add the oil and swirl to coat.
  4. Cook the patties for 4–6 minutes on the first side. Flip and cook for another 4–6 minutes, until a thermometer inserted from the side reaches 160°F.
  5. Add the cheddar during the last minute of cooking. Transfer the patties to a plate and rest for 3 minutes. Toast the buns in a separate dry skillet if desired.
  6. Spread sauce on the buns and add lettuce, a burger, tomato, and pickles. Serve right away.

Storing & reheating

Refrigerate cooked patties within 2 hours for up to 3 days. Reheat to 165°F and assemble with fresh toppings.
