HERE’S WHAT YOU’LL NEED

Ingredients

Yield: 4 servings

ONE STEP AT A TIME

Let’s make it

  1. Heat the oven to 400°F. Line a rimmed baking sheet with parchment or lightly oil a baking dish.
  2. Pat the salmon dry and arrange skin-side down, leaving a little space between fillets.
  3. Stir the olive oil, garlic, lemon juice, zest, salt, and pepper together. Brush the mixture over the salmon.
  4. Lay lemon slices over and around the fillets. Bake for 12–15 minutes, depending on thickness.
  5. Check the thickest part with a thermometer; it should reach 145°F. If needed, return to the oven in 2-minute intervals.
  6. Sprinkle with parsley and serve with the pan juices. Roasted potatoes or a green salad make easy sides.

Storing & reheating

Refrigerate within 2 hours for up to 3 days. Reheat leftovers to 165°F; add a splash of water and cover to reduce drying.
