  • 2 cups of cottage cheese
  • 6 large eggs
  • 1 cup of fresh spinach chopped (or other leafy greens)
  • 1 cup of bell peppers diced (any color)
  • 1 small onion diced
  • 1 cup of cherry tomatoes halved
  • 1 cup of shredded cheese cheddar, mozzarella, or your choice
  • 1 teaspoon of garlic powder
  • 1 teaspoon of salt
  • 1/2 teaspoon of black pepper
  • 1 teaspoon of dried oregano optional
  • Olive oil or cooking spray for greasing the baking dish

Instructions
 

  • Directions:
  • Preheat the Oven: Preheat your oven to 350°F (175°C).
  • Prepare the Baking Dish: Lightly grease a 9x13-inch baking dish with olive oil or cooking spray.
  • Sauté Vegetables: In a skillet over medium heat, add a splash of olive oil and sauté the diced onion and bell peppers until softened (about 5 minutes). Add the chopped spinach and cook until wilted. Remove from heat.
  • Mix the Base: In a large mixing bowl, whisk together the eggs, cottage cheese, garlic powder, salt, black pepper, and oregano until well combined.
  • Combine Ingredients: Stir in the sautéed vegetables and halved cherry tomatoes into the egg and cottage cheese mixture. Mix until evenly distributed.
  • Add Cheese: Fold in half of the shredded cheese, reserving the other half for topping.
  • Transfer to Baking Dish: Pour the mixture into the prepared baking dish, spreading it evenly. Sprinkle the remaining cheese on top.
  • Bake: Place the dish in the preheated oven and bake for 30-35 minutes, or until the casserole is set in the center and the cheese is bubbly and golden.
  • Cool and Serve: Let the casserole cool for a few minutes before slicing. Serve warm, and enjoy a hearty breakfast!

Notes

Tips:
Feel free to customize the casserole by adding other vegetables or meats, such as diced ham or cooked sausage.
This casserole can be made ahead of time and stored in the refrigerator for up to three days. Just reheat before serving!
