HERE’S WHAT YOU’LL NEED

Ingredients

Yield: 2 servings

ONE STEP AT A TIME

Let’s make it

  1. Butter one side of each bread slice all the way to the edges.
  2. Place two slices buttered-side down on a board. Spread the unbuttered sides with Dijon if using.
  3. Divide the cheddar and Monterey Jack between the two slices. Top with the remaining bread, buttered-side up.
  4. Set a skillet over medium-low heat. Add the sandwiches and cook for 4–5 minutes, pressing very lightly once, until the undersides are golden.
  5. Flip carefully and cook for 3–5 minutes more. If the bread browns before the cheese melts, lower the heat and cover briefly.
  6. Move to a board, rest for 1 minute, then slice and serve while the cheese is melted.

Storing & reheating

Best served immediately. Refrigerate leftovers within 2 hours for up to 2 days and reheat in a skillet until hot.
